I have been doing a lot of experimenting lately with pork belly
and bacon. I have to admit that it has been challenging! “What the...” Well
simply put, it’s a lot of bacon for one person. Now, before you go sideways on
me, I am also dieting so my consumption is more like a pound a day from the
four
pounds it was! Why the experimenting? It’s simple: I am searching for the best way to make a “shabby chic” bacon! In my last blog I spoke about the different breeds so now I am putting that research to the test. I am also putting to the test the cut size, hence, I introduce to you all the Lardon (hard on included at your own risk)! It is truly amazing getting a proper thick cut of bacon. If you have never had a thick cut, not that “butcher cut” style from the supermarket, ‘cause someone needs to be shot for that lie. To me that is treason. I am talking about a thick cut, between 4 to 16 ounces of bacon yumminess staring back at you. A slab of bacon calling to you like the ring calls to Golem “my precious!” If it is done correctly, I mean the right amount of seasoning, the right amount of smoke, the right amount of salt & most of all the right amount of fat to meat ratio - insert your “O” face here! There is truly nothing more satisfying than that. I dare you to challenge me! Right now I am experimenting with the Duroc species - so far so good. I will be experimenting with other species soon. In fact, I am going on a hunting trip, and I intend to bag myself some boar. Now, that should be interesting. Nothing more primal then hunting your dinner and providing for the family. Nothing more thrilling than the hunt, but to only hunt for what your needs are.
